Quick and Easy Chicken
(Hint: Always wash your hands thoroughly before and after handling any kind of raw meat.)(Hint: You'll need a large pot for this.)
Pour an inch of water in the bottom of the pot.
("Rule of Thumb": Put your thumb in the bottom of the pot. If the water covers up to the first joint, that's about an inch.)
Place raw chicken in pot. Cover with cold water until there is about an inch of water over the chicken (see "Rule of Thumb" above.)
Heat until the water comes to a boil.
Remove from heat.
Cover and let stand for 30 minutes. Pour off hot water and pour in cold water to stop the cooking process.
Bag/Wrap and refrigerate immediately. You now have fully-cooked, moist chicken with no added salt, fat or calories. It can be added to salads, sandwiches, anywhere you need cooked chicken.
